    Avocado and Spinach Soup

    Ingredients

    • 1 packet frozen spinach (thawed), (250 g )
    • 2 avocados
    • juice of one lemon
    • 1 clove garlic, crushed
    • 700 milliliters chicken stock
    • 1 teaspoon cumin
    • light sour cream for garnish

    Instructions

    Place all ingredients except sour cream in the food processor, process until smooth. Place in a large bowl, cover and chill. Serve in 4 bowls with a swirl of sour cream to garnish.
