Avocado and Spinach Soup
Ingredients
- 1 packet frozen spinach (thawed), (250 g )
- 2 avocados
- juice of one lemon
- 1 clove garlic, crushed
- 700 milliliters chicken stock
- 1 teaspoon cumin
- light sour cream for garnish
Instructions
Place all ingredients except sour cream in the food processor, process until smooth. Place in a large bowl, cover and chill. Serve in 4 bowls with a swirl of sour cream to garnish.
