Bacon Corn Soup

Ingredients
- 1 pound bacon, cubed
- 1 white onion, chopped
- 3 cup hot water
- 2 cup tomato juice
- 2 cup white rice
- 2 cup frozen corn
Instructions
- In a large sauce pan saute bacon and onion until bacon is crisp. Keeping all bacon fat in pan add hot water and tomato juice. Bring to a simmer and add the rice.
- When rice is cooked add the corn and simmer for about 10 minutes, or until corn is cooked. Add salt and pepper to taste.
