Beef Barley Soup
Ingredients
- 2 pound beef chuck, diced 1/2 inch pieces
- 10 cup water
- 1 1/2 cup barley
- 3 carrots, chopped
- 1 cup chopped onion
- 3 large celery stalks, chopped (including leaves)
- 14 1/2 ounce can tomatoes, with liquid
- 1/4 t pepper
- 2 can beef broth
- 4 - 6 beef bouillon cubes.
Instructions
Bring the beef chunks to a boil in the 10 cups of water. Skim foam off the top. Let simmer for 1 hour. Add the rest of the ingredients. Simmer for 1 hour. Can add more beef broth to thin soup down as necessary. This freezes well.
