Beef Barley Soup

Ingredients

  • 2 pound beef chuck, diced 1/2 inch pieces
  • 10 cup water
  • 1 1/2 cup barley
  • 3 carrots, chopped
  • 1 cup chopped onion
  • 3 large celery stalks, chopped (including leaves)
  • 14 1/2 ounce can tomatoes, with liquid
  • 1/4 t pepper
  • 2 can beef broth
  • 4 - 6 beef bouillon cubes.

Instructions

Bring the beef chunks to a boil in the 10 cups of water. Skim foam off the top. Let simmer for 1 hour. Add the rest of the ingredients. Simmer for 1 hour. Can add more beef broth to thin soup down as necessary. This freezes well.
