Borscht

Ingredients

  • 1 pound spare ribs, cut short
  • 1-1/2 onions, chopped
  • 3 large carrots, diced
  • 2 large potatoes, peeled & cubed
  • 3-5 cups beets, cooked & shredded
  • 1 cup peas
  • 2 tsp salt
  • 1/2 tsp pepper
  • 2 tbsp vinegar
  • 1 tsp dry dill weed

Instructions

Cover spare ribs in pot with enough water to cover. Bring to a boil. Cover & simmer for about 1 hour. Skim off any scum which comes to the top. Add remainder of ingredients. Simmer until vegetables are cooked. Use whipping cream or sour cream if desired.
