Borscht
Ingredients
- 1 pound spare ribs, cut short
- 1-1/2 onions, chopped
- 3 large carrots, diced
- 2 large potatoes, peeled & cubed
- 3-5 cups beets, cooked & shredded
- 1 cup peas
- 2 tsp salt
- 1/2 tsp pepper
- 2 tbsp vinegar
- 1 tsp dry dill weed
Instructions
Cover spare ribs in pot with enough water to cover. Bring to a boil. Cover & simmer for about 1 hour. Skim off any scum which comes to the top. Add remainder of ingredients. Simmer until vegetables are cooked. Use whipping cream or sour cream if desired.
