Celery and Lima Bean Soup
Ingredients
- 1 tb butter
- 2 c chopped celery
- 1/2 c chopped onion
- 1/4 c diced turnip (or carrot)
- 2 cloves garlic; minced
- 2 c water
- 1 McCormick's vegetable bouillon cube
- 2 c chicken stock
- 1 c lima beans; cooked, drained
- 1 c chicken; cooked, cubed
- 1 ts parsley
- 1/4 ts celery seed
- salt
- pepper
Instructions
In a large heavy pot, sweat the celery, onion and turnip in the butter until celery softens. Add garlic and cook for a minute or two more more. Add the other ingredients, bring to a low boil, reduce heat and simmer gently 10 minutes.
