    Celery and Lima Bean Soup

    Ingredients

    • 1 tb butter
    • 2 c chopped celery
    • 1/2 c chopped onion
    • 1/4 c diced turnip (or carrot)
    • 2 cloves garlic; minced
    • 2 c water
    • 1 McCormick's vegetable bouillon cube
    • 2 c chicken stock
    • 1 c lima beans; cooked, drained
    • 1 c chicken; cooked, cubed
    • 1 ts parsley
    • 1/4 ts celery seed
    • salt
    • pepper

    Instructions

    In a large heavy pot, sweat the celery, onion and turnip in the butter until celery softens. Add garlic and cook for a minute or two more more. Add the other ingredients, bring to a low boil, reduce heat and simmer gently 10 minutes.
