Cheese and Cauliflower Soup

Ingredients

  • 2 cups chicken stock more if needed
  • 2 cups water
  • 1 carrot
  • 1 onion
  • 1 potato
  • 1 celery stalk
  • 1/2 teaspoon cayenne pepper
  • 1 cauliflower
  • 1 broccoli
  • 1 block medium cheddar cheese
  • 1 cup half and half
  • 2 tablespoons flour

Instructions

Boil together for about 1 hour or more. Strain and then take your broth and potato only and put it into the blender and puree. Return to pot. Cut up a head of cauliflower and broccoli. Dice a carrot and a potato.Add this to the broth and bring to a boil, then simmer till veggies are tender. Shred a block of medium cheddar cheese. Blend together 1 cup of half & half with 2 tbsp flour; mix well. Add this to the broth and stir till it thickens. Slowly add the cheese, stirring each time till it melts. Simmer & enjoy.
