Cheesy Beer Soup

Cheesy Beer Soup is a perfect soup recipe for any beer and cheese lover. Made with fresh potatoes and vegetables this hearty soup is perfect for a game day snack. Dip your favorite bread or crackers in it and enjoy.

Ingredients

  • 4 cup chicken broth
  • 1 1/2 cup peeled, diced potatoes
  • 1 cup carrots, chopped
  • 1/2 cup celery, chopped
  • 1/2 cup green pepper, chopped
  • 1/4 cup onion, chopped
  • 2 can (10.75-ounces) cream of chicken soup
  • 1 cup beer
  • 16 ounce jar pasteurized process cheese spread

Instructions

  1. Put broth, potatoes, carrots, celery, green pepper, and onion into a pot. Bring to a boil.
     
  2. Lower the heat and simmer, covered, for 10 min. The veggies should be tender.
     
  3. Add cheese spread, soup and beer and stir until the cheese is melted. Heat gently, stirring constantly. Do not boil.
