- 1 Yellow Onion
- 3 Carrots
- 1 cup Celery
- 1 teaspoon Salt
- 1 teaspoon Black Pepper
- 2 teaspoon Garlic
- 6 cup Chicken Broth
- 2 Bay Leaves
- 1 tablespoon Fresh Thyme Leaves
- 2 pound Boneless Skinless Chicken Breast
- 6 ounce Wide Egg Noddles
- 1/4 cup Fresh Parsley

In a 5 quart dutch oven over medium heat, melt the butter. Add the onion, carrots, and celery and sweat for 5 minutes. Season with salt and pepper. Add the garlic and cook for 30 seconds.
