Chilled Sun Dried Tomato Bisque

Ingredients

  • 2 cups water
  • 2 cups V8 juice
  • 1/2 med onion
  • 1/2 teaspoon ground garlic
  • 1 tsp dried dill
  • 1/4 teaspoon pepper
  • 2 oz.s sliced sun-dried tomatoes
  • 1 tablespoon liquid smoke
  • 1/2 cup skim milk

Instructions

Servings: 3. Bring 2 cups of water to boil in sauce pan, add tomatoes. Cover, reduce heat and simmer 3-5 mins. Drain water off. Cover tomatoes with cool water, soak for about 5 mins, drain. put tomatoes, 1 cup juice, onion, garlic, dill weed, pepper and smoke in container of electric blender; process until smooth; add remaining 1 cup of v-8 juice. Add milk, process until blended. Chill thoroughly or over night.
