Country Potato Soup
Bring down home comfort to your soup bowl with this Country Potato Soup recipe. It's one of our easiest potato soup recipes, filled with a multitude of flavors. You don't get recipes for potato soup that are much more delicious than this version which features ingredients including celery, onion, nutmeg, Worcestershire sauce and more. The next time you're craving a big bowl of warm soup, turn on the stove and whip up a big batch of this creamy delight!
Ingredients
- 1/4 cup chopped celery
- 1/2 cup chopped onion
- 2 medium potatoes, peeled and cut in 1" cubes (about 3 cups)
- 2 1/2 cup water
- 1 bay leaf
- 1/4 teaspoon nutmeg
- 1/4 teaspoon dried marjoram
- 1/4 teaspoon celery salt
- 1/4 teaspoon black pepper
- 1 cup milk
- 1 tablespoon Worcestershire sauce
- 2 tablespoon minced fresh parsley
Instructions
- In a deep soup kettle, saute celery and onion over medium heat until onion is golden, about 5 minutes. Add potatoes, water and seasonings.
- Bring to a boil over high heat. Reduce heat and simmer, covered, for 15 minutes, or until potatoes are tender.
- Mash potatoes slightly, leaving about 1/4 of the cubes whole. Remove the bay leaf.
- Add the milk, worcestershire sauce and parsley and bring again to a boil. Serve hot.
