Country-style Corn Chowder

Ingredients
- 4 cup frozen corn
- 1/2 cup frozen peas
- 2 liter chicken stock
- 1 pinch cayenne pepper
- 2 teaspoon lemon zest
- lemon juice from 1 lemon
- 1/2 cup baby carrots, chopped
- 4 large potatoes, chopped
- 1 medium onion, chopped
- 1/4 cup parsley
- 2 celery ribs, chopped
- 7 sage leaves
- 2 tablespoon butter
- 2 tablespoon flour
- salt and pepper to taste
Instructions
- In a large saucepan on medium-low heat sweat onion, celery, carrots, sage, potatoes, lemon zest, cayenne pepper, salt and pepper with butter until the onion becomes translucent.
- Add flour and let it cook for 2 minutes.
- Add chicken stock, lemon juice, 2 cups of corn and parsley. Bring to boil, then lower the heat and simmer for 20 minutes or until all the vegetables are soft.
- Blend all the soup with stick blender until smooth.
- Add the rest of the corn and peas. Let it cook until the corn and peas are cooked, it will take about 4-5 minutes and then the soup is done! Serve and enjoy!
