Creamy Broccoli Soup

Snuggle up in your favorite blanket and enjoy this Creamy Broccoli Soup. This soup recipe is made with fresh or frozen broccoli and is a simple and quick meal. Crumble in your favorite crackers and keep warm tonight.

Ingredients

  • 20 ounces chopped frozen or fresh broccoli
  • 1 stick butter or margarine
  • 4 cans chicken broth
  • 4 tablespoons Worcestershire sauce
  • 4 tablespoons white flour
  • 16 ounces heavy cream
  • 5 tablespoons corn starch
  • 3 chicken boullion cubes
  • 2 teaspoons salt and pepper each
  • 4 tablespoons dry minced onion

Instructions

  1. In a large pot, melt 3/4 of the butter add broccoli and cook until soft.
     
  2. In a 10 inch skillet melt the remaining butter and sprinkle in flour and blend with a wire wisk. Quickly add 1 cup chicken broth, Worcestershire sauce, minced onion, and chicken boillion, stir well. Pour the mixture from the skillet into the pot.
     
  3. Add the remainder of chicken broth, then stir in the heavy cream. Add salt and pepper. Stir in corn starch and simmer for 15-20 minutes.
