Italian Sausage Soup - Southern Style

"Italian Sausage Soup is a hearty meal in a bowl and is full of vegetables, pasta and Italian flavors. We lightened ours up by using turkey or chicken sausage and gave it a southern twist too. Instead of the usual spinach we added collard greens, and instead of the usual cannelini we added baby lima beans. Black eyed peas would be a delicious Southern style addition too. Garnish with some fresh herbs and parmesan shavings and you've got soup that everyone will love."
