    Fruit Gazpacho

    This fruit gazpacho recipe is one of a kind! You'll love this mix of fresh fruits, especially during the summer months. Serve it for your family or bring it to a cookout. This dish is sure to rate high among all your fans!

    Ingredients

    • 1/2 or whole cantaloupe, cubed
    • 1 orange, juice of
    • 1 lime, juice of
    • 2 tablespoons light rum
    • 1 tablespoon honey
    • ground cloves
    • 1 container of sour cream
    • fresh mint, as desired
    • blueberries, as desired
    • raspberries, as desired
    • watermelon; seeded and cubed, as desired

    Instructions

    1. Puree at least one-half or a whole (depending on how thin/thick you like the soup) cantaloupe, with juice of 1 orange, juice of 1 lime, a couple of tablespoons light rum, 1 tablespoon honey and ground cloves.
       
    2. Pour into a serving bowl and add cubed cantaloupe, blueberries, raspberries and cubed (seeded) watermelon.
       
    3. To serve, add a dollop of sour cream to each bowl and fresh mint.
