Goulash Soup

Ingredients

  • 2 c. chopped onion
  • 1/4 c. shortening
  • 3 bell peppers (green or red), chopped
  • 3 T. tomato paste
  • 1 lb. lean beef, cut in 1 in. cubes
  • Dash of red pepper
  • 1 t. paprika
  • 2 cloves garlic, minced
  • 1/2 t. salt
  • 6 c. beef broth
  • 1 T. lemon juice
  • 1/4 t. caraway seeds, optional
  • 1 c. cubed potato

Instructions

Fry onions in shortening until transparent. Add peppers and tomato paste. Cover and simmer 10 min. Add remaining ingredients (except potatoes). Simmer 1 1/2 hrs until meat is tender. Add potatoes if desired and simmer until potatoes are done. Serves 6. (Tastes better the next day).
