Hearty Potato cheese Soup
Ingredients
- 5 medium potatoes
- 1 large onion
- 1 teaspoon salt
- White pepper, to taste
- Mixed herbs (Mrs. Dash)
- 1 to 1 1/2 cup dry instant potatoes
- 3 cups chicken broth
- 4 cups American or Pimento cheese, grated
Instructions
Finely dice the potatoes and onion; put into large saucepan, add seasonings and water to cover the vegetables. Cook until tender. Add chicken broth, heat, and add enough instant mashed potatoes to thicken the soup. Check and adjust seasonings. Stir in cheese until it melts, stirring constantly. Garnish with crumbled bacon and sliced green onion or parsley.
