Hungarian Goulash
Ingredients
- 1 cup red wine
- 3 pound beef steak tips cut into 1" cubes
- 1/3 pound bacon cut in 1/3's
- 2 white onions large, sliced
- 5 tablespoon paprika
- 4 peppers green or red, sliced
- 2 teaspoon salt
- 2 teaspoon cayenne pepper
- 1 teaspoon garlic powder
- 2 pound tomotoes canned, whole
- 3 teaspoon cumin
- 2 cup light sour cream
Instructions
Brown meat in large saucepan, draining fat regularly. Transfer to large pot. Add red wine, tomatoes, onion, peppers and spices, cover, and cook over very low heat. Cook bacon thoroughly in saucepan. Drain all fat, add to beef mixture. Continue to slow cook for at least 3 hours, adding additional seasonings as necessary. Just before serving, add sour cream, stirring well. Remove from heat. Serve over hot egg noodles. Notes: The longer you simmer this updated classic one-pot meal, the better.
