Leftover Bean Soup with Ham
Bean Soup with Ham is great if you have leftover ham or if you just want a simple soup to keep you warm. This simple recipe will have you slurping up bowl after bowl. Soup recipes are the best when they are this easy.
Ingredients
- 1 cup small white beans
- 4 cup water
- 1 1/2 pound smoked pork hock or ham bone
- 1 1/2 cup celery, chopped
- 1 cup onion, chopped
- 3/4 teaspoon thyme
- 1/2 teaspoon salt
- 1/4 teaspoon ground black pepper
- 1 bay leaf
Instructions
- Rinse beans and discard any shriveled or discoloured ones. Place beans in a large saucepan, add water, cover and bring to a boil for 2 minutes over high heat. Remove from heat and let stand for 1 hour to soak beans.
- Add pork hock or ham bone, celery, onion and seasonings. Cover and simmer for 1 - 1 1/2 hours or until beans are tender.
- Remove pork hock and separate meat from the bone. Chop meat coarsely and add back to the soup.
- Remove bay leaf and discard. Remove about 1 cup of the beans and mash or puree and add back to the soup. Taste and adjust seasonings, if necessary.
