Quick Potato Soup
Use leftover mashed potatoes to create a delicious soup for lunch the next day. You likely have all the ingredients in your pantry already.
Ingredients
- 1 chicken bouillon cube
- 1 cup mashed potatoes
- 1/4 teaspoon celery salt
- 1 2/3 cup evaporated milk
- 1 cup boiling water
- 1/4 teaspoon onion salt
- 1 tablespoon butter
Instructions
- Combine ingredients as listed.
- Heat thoroughly and serve hot.
Makes 4 cups. Variation: Chill soup and garnish with chives for vichyssoise.
