Ratatouille Stew
"Peasant's food it is called, the french classic ratatouille stew. Loaded with healthy vegetables and Mediterranean flavors, this stew is a special family recipe. My mother makes it, my grandmother did and my aunty from south France, where this dish originated, shared her special recipe too. This comforting stew includes zucchini, eggplant, tomatoes, and other wonderful veggies of your choice. I share also an option to add frozen veggies besides fresh vegetables. Also, this low-calorie meal makes a great vegan main course meal during the week, served up with rice or crunchy bread. Add some lard or sausages to that for a complete non-vegetarian meal. "
