Sausage and Bean Chowder

Ingredients

  • 1 pound pork sausage
  • 16 ounce can red kidney beans
  • 16 ounce can crushed tomatoes
  • 2 cup water
  • 1 medium onion, diced
  • 2 medium potatoes, diced
  • 1 bay leaf
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/4 tsp garlic salt
  • 1/4 tsp thyme
  • 1/4 cup chopped green pepper

Instructions

Brown sausage in skillet, drain off fat. In Dutch oven, combine kidney beans, water, tomatoes, onions, bay leaf, salt, garlic salt, thyme and black pepper. Add sausage, potatoes, and green pepper and simmer for one hour. Serve over rice with some Cajun hot sauce!
