Shrimp Bisque
Ingredients
- 1 medium onion
- 3 tbs flour
- 3 tbs butter
- 1 cup milk
- 1 (10 3/4 ounce) can chicken broth
- 1 tsp salt
- white pepper to taste
- 1/2 pound shrimp, shelled and deveined
- 1/2 cup light cream
- dash of seafood seasoning (Old Bay), or to taste
Instructions
Chop onion and saute in butter until translucent. Stir in the flour until smooth; add the chicken broth. Stir over low heat for at least 3 minutes. In separate pan add milk and shrimp; cook until mixture almost boils. Add to flour and broth mixture. Season with salt, white pepper and seafood seasoning. Stir in cream and heat thoroughly, do not boil. You can make this ahead of time and reheat before serving. You can also substitute lobster or crab. Makes about 6 servings and can be doubled.
