Springtime Asparagus Soup
This creamy soup recipe is good anytime of the year, but with the crispy asparagus and lemon flavors, it's perfect for spring! You can never have too many easy soup recipes on hand, and this Springtime Asparagus Soup is simply a delight.

Ingredients
- 1 pound asparagus
- 1 pound leaks, sliced to half-moon shape slices
- 1/2 lemon, juiced
- 3 cloves of garlic, chopped
- 1 celery root, peeled and thinly sliced
- 1/4 cup parsley, sliced
- 2 sprigs of rosemary, chopped
- 1/4 teaspoon chilli flakes
- 8 1/2 cup (about 2 liters) water
- 2 tablespoon extra virgin olive oil
- salt and pepper to taste
Instructions

Chop the woody part of asparagus and throw it away. Then chop bottom half of the asparagus thinly and leave 2in tips whole.

In large saucepan heat oil and add leaks and let them slightly caramelize for 2 minutes. Then add sliced asparagus, garlic, chopped celery root, ¼ cup sliced parsley, rosemary, chilli flakes, lemon juice, salt and pepper.

Cover everything with water. Pop the lid on and let it simmer for 10 minutes or until all the vegetables are fork tender.

Blend everything with stick blender or stand one. Then add asparagus tips and let them cook for 2 minutes, remove from the heat and serve.
