Texas Rotel Spicy Cabbage Soup
Ingredients
- 1 Bok Choy cabbage, cut up
- 1 qrt vegetable broth
- 1 onion, chopped
- 1 can Rotel tomatos with green chillies
- 1 can stewed tomatos
- 1/8 cup of lemon juice
- 3 large tomatos sliced
- salt to taste
Instructions
Cut the cabbage and add broth, lemon juce, and the Rotel in large pot bring to a boil then cut to a simmer. Then add salt and stewed tomatoes. Simmer over low heat until the Boc-choy becomes soft, then add the tomato slices, you can add water if you want to thin the soup.
