Texas Rotel Spicy Cabbage Soup

Ingredients

  • 1 Bok Choy cabbage, cut up
  • 1 qrt vegetable broth
  • 1 onion, chopped
  • 1 can Rotel tomatos with green chillies
  • 1 can stewed tomatos
  • 1/8 cup of lemon juice
  • 3 large tomatos sliced
  • salt to taste

Instructions

Cut the cabbage and add broth, lemon juce, and the Rotel in large pot bring to a boil then cut to a simmer. Then add salt and stewed tomatoes. Simmer over low heat until the Boc-choy becomes soft, then add the tomato slices, you can add water if you want to thin the soup.
