Paella de Verduras Del Tiempo

Ingredients

  • 5 Tbsp. good olive oil
  • 1/2 onion, finely chopped
  • 1 tomato, peeled and finely chopped
  • 1 carrot, finely chopped,
  • 2 cloves garlic, peeled and minced
  • 2 - 3 sprigs parsley, minced
  • 3 1/2 cup boiling water
  • Salt to taste
  • 2 green bell peppers, seeded and chopped
  • 1/2 lb. string beans
  • A handful of shelled fresh peas or shelled fresh horse beans
  • (favas or habas) or tiny new potatoes, washed but not peeled
  • 2 cup rice
  • 1 hard boiled egg (optional)

Instructions

(Paella with Seasonal Vegetables). for 4 people:. Heat the oil in the skillet, then saute, over low heat, the onion, tomato, carrot, garlic and the parsley. Add the boiling water and salt to taste, immediately followed by the bell peppers, string beans and the peas, horse beans or potatoes. After boiling for 5 minutes, add the rice, spreading it out evenly in the pan, then cook for another 15 or 16 minutes. Quarter or slice the egg, if used, and use it to decorate the paella. Cover and let stand for 5 minutes or so before serving.
