Classic Ratatouille Stew
The stew so good, they named a movie after it! This Classic Ratatouille Stew is a traditional Italian recipe that's as easy to make as it is to eat. Try this fragrant and filling one pot dinner tonight!
Ingredients
- 1 red or green bell pepper, chopped
- 1 medium zucchini, chopped
- 2 1/2 cups eggplant, peeled and cut into bite-sized pieces
- 1 can (about 28 ounces) whole tomatoes, undrained
- 1 cup water
- 3 garlic cloves, minced
- 1 teaspoon dried Italian seasoning
- 1/4 teaspoon pepper
- 1/2 cup uncooked orzo
Instructions
- In large saucepan or Dutch oven, combine the bell pepper, zucchini, eggplant, tomatoes, water, garlic, and Italian seasoning. Bring to a boil over medium-high heat.
- Reduce heat to medium-low; cover and cook 15 minutes. Add orzo; cover and cook 10 to 15 minutes or until orzo and vegetable are tender, stirring frequently.
