Crazy Corn and Pumpkin Stew
For a true taste of fall whip up a batch of this Crazy Corn and Pumpkin Stew. It will make other soup and stew recipes pale in comparison with taste and simplicity. It's super budget friendly too, making this an ideal repeat dish.
Ingredients
- 10 ounces bag of frozen corn, off the cob (or 3 fresh corn cobs)
- 1 small pumpkin (about 3 pounds)
- 1 yellow onion, peeled and sliced
- 1 cup water
- salt and pepper to taste
Instructions
- Shell the corn from the cob and mash to a pulp. I use my food processor for this. If using frozen corn, you need not let it defrost if you have a food processor.
- Peel and seed the pumpkin and cut into small pieces.
- Place all ingredients in a covered saucepan and simmer until the pumpkin is soft, about 30 minutes. Serve hot.

This sounds like a great recipe, however, for a novice cook you might want to use the term, "cut corn from cob" instead of shell. You can't shell corn until it is hardened. As for the 3 fresh corn cobs, you might like to use the term " ears of corn" not cob. Cob is what is left after the corn is cut off.
