Shepherd's Pie Stew
A quick and hearty stew recipe that is made with your favorite ingredients that you find in the classic Shepherd's pie, it can feed a hungry crowd. Giving you your fair share of vegetable per serving, Shepherd's Pie Stew is loaded with potatoes, carrots, onions peas and potatoes. Ingredients
- 1 pound ground beef
- 8 whole potatoes
- 1 onion, chopped
- 1 1/2 cup carrots, chopped
- 1 cup frozen corn
- 1 cup frozen peas
- 1 cup barbeque sauce
- 2 cups chicken broth
- salt and pepper to taste
- 1 teaspoon dried oregano
Instructions

In a large skillet or saucepan, start browning beef over medium-high heat.

Meanwhile, wash potatoes and pierce with a fork. Microwave on high for 5-8 minutes, or until tender. Set aside to cool. When beef is almost finished browning, add onion.

Cook until tender. Turn heat down to medium and add carrots, corn, peas, and potatoes.

Stir the BBQ sauce into the meat mixture, and salt, pepper, and oregano to taste.
- Stir in the broth and turn the heat to high. Bring to a boil, reduce heat and simmer for 15 minutes.
