Ingredients

  • 6 pound sweet potatoes
  • 4 tablespoon bourbon
  • 1/2 cup butter, softened
  • 1 cup pecan halves
  • 1 teaspoon sea salt
  • 3 tablespoon Xagave

Instructions

  1. Preheat oven to 425 degrees F. Prick sweet potatoes with fork and on a baking sheet, bake in middle of oven until soft, about 1 hour.
     
  2. When cool enough to handle, peel potatoes and transfer to a large bowl.
     
  3. Add bourbon and 6 tablespoon butter and mash with a potato masher.
     
  4. Season with salt and pepper.
     
  5. Transfer to a 2-quart baking dish. In a small sauté pan, melt remaining butter and cook pecans until fragrant, about 3 - 5 minutes.
     
  6. Salt to taste. Reduce oven to 325 degrees F.
     
  7. Arrange pecans on top of sweet potatoes and drizzle with Xagave.
     
  8. Bake for 20 to 30 minutes, until heated through and pecans are slightly browned.
