Ingredients

  • Cornish Game Honeyed Hens:
  • 2 premium all-natural Cornish hens
  • 1/8 cup butter
  • 2 tablespoon honey (orange sage)
  • pepper (to taste)
  • ginger (to taste)
  • Cran-Apple Nut Stuffing:
  • 1 package seasoned stuffing
  • 1 Fuji apple, diced
  • 2/3 cup fresh whole cranberries
  • 1 cup celery, chopped
  • 1/2 cup walnuts, chopped
  • 1/2 cup European style butter

Instructions

Cornish Game Honeyed Hens:

  1. Preheat oven to 350 degrees F.
     
  2. In a sauce pan, melt butter and stir in honey.
     
  3. Wash hens. Place in baking dish.
     
  4. Season hens. Bake for one and a half hours or until cooked. Baste periodically with honey butter.
     
  5. Cover with foil the last 10 to 15 minutes. (Use a meat thermometer; when it reads 180 degrees F, it’s done.)
     

Cran-Apple Nut Stuffing:

  1. Preheat oven to 350 degrees F.
     
  2. In a frying pan, use a small bit of European style butter and sauté fruit, celery, and nuts.
     
  3. Put sautéed mixture in a glass baking dish. Pop into oven at 350 degrees F for about an hour.
