Ingredients

  • 1 large finely chopped onion
  • 3 finely chopped celery sticks
  • 1 pound breakfast or any other sausage you like cut to 1/2 inch pieces
  • 1 tablespoon Hungarian paprika
  • 1 teaspoon cayenne pepper
  • 1/2 teaspoon pepper
  • 2 teaspoon kosher salt
  • 1 loaf stale white bread, cut to 1 inch cubes
  • 2 cup turkey juices (from slow cooked Thanksgiving turkey recipe)
  • 5 eggs

Instructions

  1. Caramelize onion and celery in turkey fat or butter on high heat in a large skillet.

  2. Add the sausages and caramelize them as well for about 10 minutes or until the sausages are cooked thru. Then add seasoning: salt, pepper, no salt seasoning, Hungarian paprika and cayenne pepper. Mix it well with caramelized vegetables and turkey fat.

  3. Transfer the stuffing to 13”x9” oven safe dish, cover with plastic and pop to refrigerator overnight.

  4. 1 hour before serving, take the juices from slow cooked turkey that by now will be almost cooked thru and cool to room temperature. Add the eggs and mix with the juices.

  5. Cover the stuffing; if it’s too dry add couple ladles of juices on dry patches

  6. Pop to preheated oven to 350 F degrees for about 45 minutes.
