Ingredients

  • 1 package stove top cornbread stuffing mix (plus ingredients to make the cornbread: 4 tablespoons butter and 1.5 cups chicken broth or water)
  • 1 tablespoon olive oil
  • 1 package Jimmy Dean Premium Pork Roll Sausage, cut into 1-inch pieces
  • 1 red bell pepper, chopped
  • 3 stalks celery, chopped
  • 1/2 yellow onion, chopped
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper

Instructions

  1. Preheat oven to 350 degrees.

  2. Cook cornbread stuffing according to package instructions.

  3. Pour cooked cornbread into a 9x13 inch casserole dish.

  4. Meanwhile, in a medium saucepan, saute the sausage, pepper, celery, and onion with 1 tablespoon of olive oil, salt and pepper. Saute for 5 minutes.

  5. Pour over the cornbread stuffing and stir to combine.
