Vegan Shells
Vegan Shells is one of the best frugal vegan recipes involving pasta. When a quick and easy vegan recipe combines pasta shells, tofu and beans like this recipe does, only tasty things can come of it.
Ingredients
- 1 package silken tofu
- 1 can white beans, drained
- 1 clove garlic
- 1/2 teaspoon basil
- 1/2 teaspoon oregano
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1 jar tomato sauce
- 1 box large shells
- 1 bell pepper, diced
Instructions
- Combine tofu, beans, garlic, basil, oregano, salt and pepper in blender and blend until smooth.
- Cook shells according to directions, drain, rinse, cool.
- Grease bottom of glass pan (9 inch by 13 inch) and cover with a little tomato sauce. Fill cooled shells with filling mixture and place in single layer in glass pan.
- Spread the rest of the tomato sauce on top of the shells. Scatter bell pepper on top. Eggplant and vegan mozzarella also make for tasty toppings.
- Cover with foil and bake at 350 degrees F for 45 minutes.
