Medium White Sauce:


Ingredients:



  • 1 gallon whole milk, warmed but not boiling

  • 8 ounces flour, may need a little more

  • 1 pound unsalted butter or margarine

  • 1 tablespoon dry mustard

  • 1 1/2 tablespoons salt

  • White pepper (optional)


Instructions:



  1. Melt the butter in a large saucepan. Remove from heat and add the flour; stir until smooth.

     

  2. Add salt and dry mustard. Add the hot milk gradually whisking constantly.

     

  3. Cook and whisk until smooth and boiling. Boiling will thicken the sauce. This will take about 15-20 minutes.

Ingredients

  • 12 pounds potatoes
  • Salt, to taste
  • 1 gallon white sauce (recipe follows)
  • 2 pounds cheddar cheese, grated
  • 6 ounces buttered bread crumbs

Instructions

  1. Peel and cube the potatoes, add salt to taste, boil until tender but not overcooked. Drain well.
     
  2. Add the white sauce and the cheese. Mix well but gently.
     
  3. Place in 2 pans, 12-inch x 20-inch x 2-inch. Sprinkle the bread crumbs over the top of the potatoes (extra grated cheese can also be sprinkled) and bake at 400 degrees F for about 25 minutes.

Ohhh yum...this recipe is so awesome, I just love it when I come across bulk recipes like this. And who doesn't love Au Gratin potatoes...not this girl! I've never made these potatoes homemade before, so I'm definitely excited to try this recipe and have them for dinner plus freeze a ton to enjoy several other times. The only thing I think I'd do differently is maybe to add some chives and substitute a little of the cheese with some Parmesan.

In place of using all cheddar cheese, do equal portions of sharp cheddar, longhorn and montaray jack (sp?). I also add sour cream but that is just a preferrence.
