    Baked Butternut Squash

    Ingredients

    • 1 large butternut squash
    • salt
    • freshly ground black pepper
    • 2 teaspoons anise seed
    • 1/8 teaspoon ground cardamom
    • 3 tablespoons brown sugar
    • 8 tablespoons butter, melted
    • 2 tablespoons fresh lemon juice

    Instructions

    Peel and cut open the squash. remove and discard the seeds and the fibers. Cut the squash into 1-inch cubes. Turn the squash into a buttered 2-quart baking dish. Sprinkle with the salt and pepper, anise seed, cardamom and brown sugar. Drizzle butter and lemon juice over the top. Bake the squash, uncovered in a preheated 350F oven for about 30 minutes, or until tender.

    Ah, nice. Baked butternut squash recipe. Just what I need. This is my first time cooking butternut squash. I wonder will it be a nice side dish for grilled chicken, like potato. I hope my kids like it, so we can have more choices for dinner menu. Thanks for sharing the recipe.
