Boston Zucchini
Zucchini is an excellent, affordable food in the summertime and this Boston zucchini is a colorful and healthy side dish to any main course. It is said that the more colorful a dish is the better it is for you and with this recipe for summer squash you have green, yellow, purple and brown contrasting colors on your plate.
Ingredients
- 1 clove garlic, chopped
- 2 summer squash, sliced in 1/2-inch thick pieces
- 2 green onions, sliced
- 1 cup mushrooms, sliced (optional)
- 1/2 teaspoon thyme
- 1/2 teaspoon basil
- 1 pinch salt
- 1 pinch pepper
- 1/4 cup raisins
- 1/4 cup chopped pecans (or other nuts)
Instructions
- Saute veggies, herbs, seasonings in olive oil for approximately ten minutes or until tender crisp.
- About two minutes before they are done, add the nuts and raisins.
- Stir till heated through.
