Candied Sweet Potatoes with Sherry

Ingredients

  • 6 large sweet potatoes (4 pounds)
  • 2 oranges
  • 3/4 cup melted butter or margarine
  • 2 cups sugar
  • 1/4 cup orange juice
  • 1/4 cup cream sherry or bourbon
  • 2 teaspoons cinnamon
  • 1 teaspoon vanilla

Instructions

Peel and slice raw potatoes. Slice orange into thin slices (1/4-inchthick). Layer potatoes and oranges in greased 11x7x1&1/2-inch dish. Combine butter or margarine, sugar, juice, sherry, and cinnamon. Addvanilla if desired. Pour over potato mixture, cover and let sit at room temperature 1 hour to absorb flavors. Bake, uncovered, at 350 degrees for 1&1/2 hours, basting often.
