Cheesy Mashed Potato Casserole

Ingredients
- 4 potatoes, medium size
- 2 cup freshly grated Parmigiano Reggiano
- 2 eggs
- 1 cup milk
- salt and pepper, to taste
- 6 tablespoon butter
Instructions
- Preheat oven to 400F degrees.
- Boil the potatoes until tender.
- Drain, peel while still hot, and mash in a large bowl.
- Add the cheese, eggs, milk, salt and pepper, mixing thoroughly.
- Transfer to a baking dish smeared with butter and bake in an oven preheated to 400F degeres for about 30 minutes.
