Chipotle Mashed Red Potatoes

Give your red potato recipes something more. Chipotle Mashed Potatoes will convert you with the first taste. Fresh cilantro and chipotle sauce give them a mild Mexican flavor and a zesty taste.

Ingredients

  • 2 pound medium red potatoes (peeled or unpeeled), cut into chunks
  • 6 tablespoon butter or margarine
  • 1/2 cup chipotle salsa
  • 1/4 cup fresh cilantro, chopped
  • salt to taste

Instructions

  1. Place potatoes in a large saucepan with water to cover. Bring to a boil, reduce heat to medium low, and cook until potatoes are fork tender, about 20 minutes.
     
  2. Drain and return potatoes to the pot. Set the pot over low heat and add the butter or margarine, chipotle salsa, cilantro, and salt.
     
  3. Mash until potatoes are as smooth as you like. Taste and adjust seasonings.
