Company Carrots

Ingredients

  • 2 1/2 pound carrots, scrubbed or peeled, cut into coins, and cooked
  • 1/4 cup water from cooking the carrots
  • 1/2 cup mayonnaise
  • 1 tablespoon onion, minced
  • 1/4 cup fine cracker crumbs
  • 1 tablespoon ground/grated horseradish
  • 2 tablespoon butter, melted
  • Paprika
  • chopped parsley

Instructions

Mix all ingredients together well. Bake at 325F for 15 to 20 minutes.
