Ingredients

  • 4 Ears of Corn
  • 8 ounce Cherry Tomatoes
  • 1 Red Onion
  • 3 cup Cucumber
  • 1 cup Avocado Oil
  • Juice of Lemon
  • 2 teaspoon Black Pepper
  • 1 cup Parsley
  • 1 cup Feta Cheese
  1. If using corn on the cob, remove husk and boil for 15 minutes in a large pot of water. Remove and let cool before handling. Cut off the kernels and add to a large bowl.

  2. If using canned corn, simply drain and rinse in a colander and add to a large bowl. For frozen corn, cook according to package directions, drain and let cool.
