Crazy Crispy Potatoes
It doesn't get much simpler than these Crazy Crispy Potatoes. It's oven fried potatoes at their best; you won't be able to get enough of this easy baked potato recipe. Try it with red potatoes, white or your standard Russet.
Ingredients
- 2 pound russet potatoes (or potato of choice) boiled in skins until tender
- 1 bunch scallions (chopped)
- 2 teaspoon Italian seasoning
- 1/2 cup vegetable stock
- pepper to taste
Instructions
- Preheat oven to 400 degrees F. Peel cooked potatoes and dice in cubes.
- Place in 8"x11" baking dish that has been sprayed with vegetable oil. Sprinkle with scallions, Italian seasoning and pepper. Mix gently with fork. Pour vegetable stock over potatoes.
- Bake on upper shelf, stirring every 15 minutes until nicely browned and crisp, about 45 minutes. Place under broiler for 1 minute to complete browning.
