Creamed peas and new potatoes were a springtime staple at my house growing up. My dad grows a huge garden, and peas and potatoes were always some of the first produce to be ready to eat in the late spring.
My mom makes delicious creamed peas and potatoes, and here's what she had to say when I asked about one of the other key ingredients in the recipe, onions: "Pearl onions are the fancy way, but I like sauteed green onions since they're in season." I can tell you that not only are they in season, they also come out of their garden!

- 1 pound baby yellow potatoes, quartered
- 1 cup frozen peas
- 1 onion, minced and sauteed
- 1 tablespoon butter
- 1 tablespoon flour
- 1 cup milk
- salt and pepper to taste
- sliced scallions for garnish

Bring a large pot of water to a boil over high heat. Boil potatoes for 15 to 20 minutes, or until tender. Drain.

Using the same saucepan, melt butter over medium heat. Stir in flour to make a thick paste; gradually whisk in milk, stirring constantly until slightly thickened. Season with salt and pepper to taste. Now add potatoes, peas and onions to the sauce; simmer for about 5 minutes, stirring often.

Serve with scallions.
