Creamed Spinach

Ingredients

  • 3 tablespoon margarine or butter
  • 3 tablespoon flour
  • 2 cup milk
  • 1/2 cup Parmesean or Romano cheese, grated (or more)
  • 1 small onion, diced fine
  • 2 to 4 cloves garlic, smashed
  • 1 to 2 tablespoons butter
  • 2 packages frozen chopped spinach, thawed and squeezed

Instructions

  1. Make a basic white (Bechamel) sauce: In a large pot, cook margarine and flour for a few minutes to cook the flour and make a roux. Add 2 milk and cook until thick. You might have to add more milk to adjust it to the creaminess you like. To this add grated cheese.
     
  2. In another pot ,saute onion, garlic, butter and spinach. Cook this about 10 or so minutes until the spinach is hot and onion is clear. Add the above white sauce and mix thouroughly.
     
  3. Salt and pepper to taste after its all combined. Sprinkle the top with some buttered crumbs if desired.
