Cumin Potatoes

Ingredients

  • 2 tablespoon canola oil
  • 1 teaspoon cumin seed
  • 1 teaspoon turmeric
  • 1/2 teaspoon ground coriander
  • 1 1/2 pound cooked potatoes, cut into squares
  • 1 tablespoon canola oil
  • 1 tablespoon cilantro, finely chopped
  • salt and pepper, to taste

Instructions

  1. Heat 2 Tablespoons of canola oil in saucepan over medium-high heat. Add cumin seeds, turmeric and coriander. Saute for one minute.
     
  2. Add potatoes and saute for 15-20 minutes until reheated throughout and nicely browned. Remove from heat.
     
  3. Drizzle with 1 Tablespoon of canola oil. Add cilantro. Season with salt and pepper. Serve immediately.
