Green Beans Lyonnaise
Ingredients
- 4 slices bacon, chopped
- 1 medium onion, thinly sliced
- 1 1/2 lb. fresh green beans, trimmed
- 2 T. chopped parsley
- 2 T. vinegar (whatever kind you like)
Instructions
Fry bacon until crisp. Remove and drain, reserving about 2 T. drippings. Saute onion in bacon drippings until brown. In a medium saucepan, cook green beans until crisp-tender. Drain and add to onions, and heat through. Add parsley, vinegar, bacon, salt and freshly ground pepper to taste.
