Italian Potato Balls
Make these delicious Italian Potato Balls which go great with an assortment of dishes. For boiled potato recipes this is one of the easiest and very pleasing.
Ingredients
- 8 large waxy potatoes, peeled
- 2 tablespoons butter
- 1 tablespoon olive oil
- 2 sprigs fresh rosemary
- 2 garlic cloves
- salt and pepper to taste
Instructions
- Using a melon baller, scoop potatoes into balls.
- In a large pot, bring salted water to a boil and add potato balls.
- Parboil 1 minute. Drain. Melt butter with oil in a skillet.
- When butter foams, add potato balls, rosmeary, garlic and salt and pepper.
- Cook over medium heat, turning frequently.
- When potatoes are golden, remove garlic and fresh rosemary. Serve immediately.

@seachele7: Waxy potatoes are potatoes that have a more dense texture. They are not very fluffy, like baking potatoes. Many red potatoes are considered "waxy." Hope this helps! @jjj2: The directions to scoop raw potatoes into balls are correct here. It may take a while to get used to doing this with a melon baller, but you need to have the potatoes balled before they are boiled. Hope this helps!
