I recently tried pancakes made from leftover mashed potatoes and I wish I had tried them sooner! This Leftover Mashed Potato Pancake recipe is super easy and quick to make. It only needs four ingredients. If you want to, you could even add a little cheese into the mix. I will never worry about having to throw out good food again!
