Low Fat Eggplant Parmesan
This eggplant parmesan recipe is different from most in that it has practically no fat in it at all! There is no frying involved - this is a baked eggplant recipe, and you can even microwave it if you like. How easy is that?

- Prepare the egglplant the same way as for oven-baking.
- Cover tightly and microwave 8-10 minutes, or until tender.
- Sprinkle with cheese and let stand 5 minutes. If cheese is not melted, microwave 1 minute.

Ingredients
- 1 eggplant, about 1 pound, sliced 1/2-inch thick
- 1 15-ounce can tomato sauce
- 1 clove garlic, minced
- 1/2 teaspoon basil
- 1/2 cup shredded skim-milk mozarella cheese
Instructions
- Preheat oven to 325F degrees.
- Lay eggplant slices in single layer in flat baking dish lightly sprayed with no-stick cooking spray.
- Combine tomato sauce, garlic, basil, and pour over the eggplant.
- Bake for about 1/2 hour, or until tender.
- Sprinkle with cheese.
- Return to oven just until cheese is melted.
